Côtes de Thau IGP covers vineyards around the Étang de Thau lagoon in the Hérault, an area influenced by Mediterranean breezes and maritime conditions. The zone produces red, rosé, and white wines from varieties such as Grenache, Syrah, Mourvèdre, and Vermentino. The wines often show freshness and balance reflecting the cooling influence of the nearby water.
